Soft Fried Beef

Category: Sichuan 

Materials:

Beef, salt, sugar, cooking wine, sesame oil, sliced ginger, star anise, galangal, scallion, broth, salad oil.

Procedures:

  1. Cut the beef to pieces no thicker than 2 cm, rinse out blood, boil it with the sliced ginger, scallion, cooking wine, salt, star anise, galangal till it is fully cooked. Take it out to cool.
  2. Cut the beef into sticks, fry them in the salad oil.
  3. Stir fry some scallion, then add the broth, sugar and stir them every few seconds until it is about to be dry, then add the sesame oil and stir fry them quickly.  Take them out and serve.
